There is a quiet cost to what industrial food processing did to the subcontinent's ingredient culture. It did not only change what we eat. It changed what we were taught was worth eating. Refined sugar displaced date and palm sweeteners. Polished rice displaced millets. Somewhere in that shift, nutrition was stripped and the link between farmer and eater was severed.
Uncolonised begins with a simple refusal. We do not accept that trade off as progress. This is a brand built on returning what was already ours to begin with.
